Vegan Protein Brownies

  1. 15 ounce can black beans, drained and rinsed well
  2. 1/2 cup plant based Chocolate protein powder
  3. 1/4 cup cocoa powder (I used 75% Black Onyx and 25% Dutch Cocoa powders from Savory Spice)
  4. 1/4 cup melted coconut oil
  5. 2 tsp granulated coconut sugar (lower glycemic index)
  6. 1 tsp vanilla extract (Savory Spice Shop)
  7. pinch of salt (if soaking your own beans you may need a little more)
  8. 1/2 cup Enjoy dairy and soy free chocolate chips
  1. Preheat oven to 350 degrees. Grease a 8x8 glass baking dish with coconut oil
  2. Drain and thoroughly rinse the black beans
  3. In your food processor, combine your black beans, protein powder, cocoa powder, coconut oil, sugar, vanilla and salt
  4. Process until smooth, scrapping down the sides as needed. If mixture is too dry add a tsp or 2 of warm water
  5. Hand mix in the chocolate chips
  6. Spoon mixture into your prepared baking dish
  7. Bake for 20-25 minutes or until just set in the center
  8. Let cool for 1 hour
  9. Refrigerate for a few hours, to finish setting
  10. Cut into bars
  11. Store in the refrigerator
  1. This is a simple recipe that is easy to adapt for individual tastes. Try adding cinnamon and cayenne and even coarse sea salt-yum! Or swirl in some raw peanut butter-oh my! The possibilities are endless
