Vegan Broccoli Salad
A non dairy version of a summer favorite.

Ingredients
  1. 1 small head broccoli, cut into bite sized pieces
  2. 1/3 c red onion
  3. 1 c red grapes
  4. 1/4 c toasted pepitas
  5. Dressing
  6. 1/2 c Vegan Mayo (I used Just Mayo)
  7. 2 tbsp apple cider vinegar
  8. 2 tbsp cold water
  9. 1 tsp sugar
  10. 1/2 tsp fresh cracked pepper
  11. salt to taste
Instructions
  1. Place first 3 ingredients in a bowl
  2. In a separate bowl make the dressing, taste and adjust as needed
  3. Mix the two together and chill in fridge for at least a few hours
  4. Add toasted pepita's before serving to keep their crunch
